Rock and Roll Cucumbers

1 Large Cucumber
2 Roma Tomatoes
Fresh Basil/Dill
Herb Cashew Cheese

Slice your cucumber into long thick slices (1 inch thick). Remove the core from tomatoes and slice remainder into long thin strips. In each Cucumber add 1 tsp herb cashew cheese, a basil leaf or sprig of fresh dill and a long thin slice of tomato.

To make the Herb Cheese blend all ingredients in food processor.

Herb Cashew Cheese

2 cups soaked cashews (cover in a bowl of water and soak overnight ~ 6 hours, no more than 8 hours)

1/4-1/2 cup filtered water (depending on desired consistency – add slowly while blending all other ingredients)

1 tsp celtic sea salt

1 tbsp freshly squeezed lemon juice

1 chopped red capsicum (even better if it’s cooked and soft)

1 tbsp chopped parsley

4 basil leaves chopped finely

4 fresh thyme leaves chopped

2-3 fresh oregano leaves chopped

2 tbsp nutritional yeast flakes or 1 tbsp psyllium husk
