This week I just really felt like CAKE !

 Although to be our best selves we do need to persist on the right path, strive for inner peace, motivate ourselves each day, find contentment and detach from those things which hold us back, make us needy, fearful and self destructive..

We also need to be able to distinguish between severe emotional attachment to certain food types and simply acquiring a taste for something and enjoying the moment ! So much of what we hear in the nutritional world relates to the word NO. No sugar, no fat, no dairy, no meat, no wheat, no no no no ! How does this make you feel? Happy and at ease   or neglected and without

Well, I have to tell you. I’m just a YES girl at heart and although the word NO is very important (no thank you that is not my choice, no I don’t feel like over-training my body, no I don’t want to over eat and feel awful, no I would like to stay home and rest thank you), the majority of us really do not need to give up our tasty treats when striving to look good and feel great !!

So from now on, let’s be AMBITIOUS ! I’m eliminating the baddies from this blueberry cake, I am adding super foods and I’m going to enjoy every piece of it !

Yes I’m going to leave out those nasty ingredients that hold me down and move me away from my goals. Not because I dis-allow them (I could allocate myself a ‘cheat’ meal each week but I don’t believe in them).

I’m going to do it because I want to feel great, eat tasty food and what’s even better, say YES and still reach my goals !!!!

Even if I skip the baking powder in this recipe below, these muffins will still rise, taste DELISH and help me to reach my new body !

Be aware of your emotions, put daily care into your self and there’s no reason why you can’t have your cake and eat it too, all while hitting your targets !!

Healthy Blueberry Muffin Cake

Ingredients:

1 cup fresh blueberries
1 3/4 cups quinoa flour
1/2 cup 100% rolled oats
2 tsps baking powder
1/2 teaspoon celtic sea salt
1/2 teaspoon cinnamon
1 tbsp 100% maple syrup or stevia
2/3 cup coconut/kefir yoghurt
1 tablespoon lemon juice
1/4 cup almond milk
2 large eggs
1/4 tsp cinnamon powder for topping

Preparation:

Heat oven to 180°c. Oil a 9x5x3-inch pan with a paper towel and cold pressed olive or coconut oil.

Combine the blueberries with quinoa, oats, baking powder, salt, 1/2 teaspoon cinnamon, and stevia or maple syrup.

In another bowl, whisk yogurt, lemon juice, almond milk and eggs.

Pour yogurt mixture into the dry ingredients and stir until blended. Spoon into the prepared pan; sprinkle with remaining cinnamon powder.

Bake for approximately 35 minutes, or until a toothpick inserted in center comes out clean (I like mine a little moist, so I took it out early!)
