We will be heading to Bequia tomorrow morning for the weekend sailing regatta. Known as the best weekend of the year in the islands, the sun will be shining and the sandy haven jam packed with festivities. My easter brownies and cookies are in the fridge and we are almost ready to set sail.

Rock ‘n’ Roll Cucumbers

Our Facebook Recipe of the Week !! (revised from mum what’s for dinner).
Rock and Roll Cucumbers
1 Large Cucumber
2 Roma Tomatoes
Fresh Basil/Dill
Herb Cashew Cheese
Slice your cucumber into long thick slices (1 inch thick). Remove the core from tomatoes and slice remainder into long thin strips. In each Cucumber add 1 tsp herb cashew cheese, a basil leaf or sprig of fresh dill and a long thin slice of tomato.

To make the Herb Cheese blend all ingredients in food processor.

Here is my ultimate favourite Cheesecake Recipe for the special day by Sparkpeople. I tried it out yesterday and it is now set and ready to eat !!

When I poured the mixture into the pan, it was as runny as my morning banana smoothie and I thought it would never set but it did !

Once it begins to set, you can simply manipulate it into whatever shape you like
